Hi Barbara,
A "knock-off" beer is what you drink in Australia after you "knock-off" (finish) work. It's a sort of a "I've survived the day" beer because we Aussie's love our beer! Usually, on Friday's - it's "knock-off drinks" meaning you leave work about half an hour early and head to the pub with your work mates for a drink.

Oh, and it looks like Anne has answered already but here is my spin on it as well!
A knock-off beer is the beverage you consume - let us say, just to be wacky, a 'beer' :D - once you have 'knocked off' work, ie finished at the place you keep going to every weekday and they give you money in exchange for sitting at a desk and shuffling papers around...or is that just my day job? ;)
My friends and I use this saying quite regularly, especially of a Friday evening. "Cassandra," they'll say, "let us go for a knock-off beer." To which I reply, "But of course, dear friend/colleague/acquaintance/random person who wants to drink beer with me." :D
